Crustless Spinach Mini Quiche


INGREDIENTS

  • 7 eggs
  • 2 cups of shredded cheese
  • 3-4 large handfuls of baby spinach leaves
  • 1 cup mushrooms, chopped
  • 5 green onions, sliced
  • 2 tbsp of butter
  • 1/2 tsp cracked black pepper
  • 1/2 tsp salt

INSTRUCTIONS

  1.  Preheat your oven to 350° F. Line muffin tray with silicone baking cups or spray with cooking spray.
  2.  upload butter to big frying pan, then saute mushrooms, onions and spinach until the mushrooms are gentle and the spinach is wilted.
  3. Crack the eggs right into a huge bowl and whisk. as soon as eggs are fully combined, stir thru grated cheese, salt, pepper, and sauteed vegetables.
  4. Spoon combination calmly into covered muffin tray – you’ll need each silicone cup to be approximately half of full.
  5.  Bake for about 20-22 mins.
